Very popular at Thursday night and Sunday night dinners! A classic from my childhood in the 1970s. Most any kind of rice will work (white, instant, brown, converted)
Ingredients
2 cups cooked rice (I use brown rice)
1 cup cooked chicken, cut or torn into small pieces
1 cup grated cheddar cheese (mild, medium or sharp)
1 can cream of chicken soup (not diluted)
1 lb package frozen broccoli cuts
9 x 9 inch glass or metal baking dish
Pam or butter for the pan
Mix all ingredients together in a large bowl. Make sure everything is well mixed and somewhat evenly distributed. Lightly spray Pam or rub butter inside the baking dish. Pour mixture into baking dish and spread evenly. You can top with additional cheese if you like.
Bake in 350 degree oven for 30 – 45 minutes or until bubbly at edges and well heated.
