Peanut Sesame Noodles

This received rave reviews at Thursday Dinner on September 1st.  Delicious and easy to make!  The peanut taste is stronger than the sesame taste.   (Sorry the photo doesn’t give you a hint of what they look like.  Next time I’ll take a photo!)

Ingredients

1/3 – 1/2 cup peanut butter

6 tablespoons soy sauce

pinch cayenne pepper (I forgot to add it – but it should make a little bite!)

3 tablespoons canola oil (or another mild vegetable oil)

3 tablespoons toasted sesame oil

1 tablespoon honey (or you could use 1 1/2 teaspoons sugar)

1 pound spaghetti

peanuts

chopped scallions (also known as green onions)

Boil pasta as directed on package.  Mix peanut butter, soy, cayenne, oil, sesame oil and honey with a wisk or fork while pasta cooks.  Drain pasta, then add peanut mixture to the hot pasta.  Mix with until all the pasta is coated evenly.  Cool and serve room temperature or cold.  Garnish with chopped scallions and peanuts.
